Lobo at The Ritz Carlton Mega Kuningan, Jakarta

Welcoming the fasting month, Lobo at The Ritz Carlton Mega Kuningan has prepared a surprise for you delicious culinary hunters. A Michelin Star Chef is now on the house prepping wonderful dishes in his line of menus.
I had the chance to tried his 6-course tasting menu with fellow bloggers. It was my first time to ever tasted Michelin Star worthy dishes, and I was very excited!









Lobo, as I would expected from a 5 star hotel restaurant establishment, puts a very elegant yet classical touch in its interior. The yellow-ish lights give a nice warm ambience to the venue, though I think for bloggers it will be so hard to get good pictures at this kind of lighting. It was my first time here, but definitely the first glance of the restaurant had captured my heart. I can't wait to sit and try the food!

Chef de Cuisine - Jan Schwittalla

Born and raised in Gelsenkirchen, Germany, the Chef who is inspired by the arts and beauty of great many things, Jan Schwittalla, brings in a fresh new menu to Lobo Restaurant via his modern culinary techniques. Having experienced working and owning a Michelin-starred restaurant in Bordeaux, France, for the past 6 years, he painstakingly prepares every single dish with love as he firmly believes that presentation is equally significant as taste. savor and be ready to fall in love with his all-new signature dishes as he is ready to create memories...





Jan's Tasting Menu:

- 4 course IDR 661,000++/person (wine pairing additional IDR 439,000++ /person)
- 6 course IDR 824,000++/person (wine pairing additional IDR 646,000++ /person)


So Jan's Tasting Menu ranges from appetizer to dessert. A complete dining set to pamper your taste buds as these wonderful dishes were designed to give you a fine dining experience of a Michelin-starred quality food.
Let's overview the dishes one at a time:

Amuse Bouche


"Mushroom Hollandaise" served on an opened egg shell along with a spoon of edamame beans and truffle foam. Unique presentation indeed. It's the kind of thing you would expected from a Michelin-starred Chef. The taste was divine. Absolutely delicious. Mix the edamame and the truffle with the "mushroom hollandaise" and feel the burst of flavors just combining so exquisitely in my mouth. 

1st Course : Gazpacho | Tomato Sorbet | Caramel Pepper

Another unique dish was presented as the first course. It's like a big candy sphere which had to be cracked. The sphere was actually tomato-flavored candy. And inside it was the gazpacho and the tomato sorbet. It's kind of a surprise also as I dig in a bit further I found some croutons. 



Crack it up!

The fresh tomato sorbet was exhilirating, chill and sour but so delicious. The croutons gave a nice crunchy texture which was also nice. This dish is not only unique, but delicious and fresh with a combination of sweet and sour flavor.

2nd Course : Egg | Potato | Duxelles | Truffle | Porcini



Crispy fried tube-shaped potato on top of truffle mushroom cream soup which also mixed with slow cooked egg. This one also tasted delicious. The strong truffle flavor was absolutely the highlight. Wonderful dish!

3rd Course : Langoustine | Caviar | Bisque


I actually never had caviar before so I never know how it should taste. But if it tasted something like I tried in this dish, I will absolutely love it. 
Black sturia caviar served on top of cucumber jelly and salsa. You might think it's kinda weird to have cucumber jelly, but actually when it is eaten together with the caviar, it tasted really good! The dish was also served with a bowl of langoustine bisque as its condiment. The combination was really nice and unique.

4th Course : Sea Bass | Olive | Star Anise



Perfectly grilled chilean sea bass served with olive and emulsion sauce and also tomato, chives, bellpepper jelly. This one was also delicious. The sea bass and the sauce made a great combo and surely will satisfy your taste buds.

5th Course : Beef Cheek | Oxtail Ragout | Onion




This dish was DA BOMB! The most awesome dish of the night (according to me, LOL). The beef cheek was extraordinary. It's so sooo juicy, soooo moist!! OMG, I almost literally bit my own cheek just eating this beef cheek. It's so tender as if it melts in my mouth. The seasoning was just spot on. Perfecto. The ragout was just the same astonishing as the beef cheek. Kudos to the chef!

6th Course : Mango | Lime | Coconut | Passion Fruit


For the dessert and also providing a perfect closure was this mixture of mango and lime cream with coconut and passion fruit. Not too overly sweet but still refreshing and each component combined so well together.

Overall conclusion, there was simply no flaw in that day's dinner. Every dish was just spot on, executed perfectly and presented so so nicely. Chef Jan as one of the Chef from a Michelin-starred establishment really shown some masterpiece work on the menus. It will be interesting to see how he does the same on other ala carte menus.
I wish you all the best of luck, Chef Jan. Really loved your food! And congrats Lobo for obtaining such a talented cook in the kitchen.
